CHOQUINHOS À ALGARVIA
Ingredientes:
1,5 kg de choquinhos
2 dl de azeite
8 dentes de alho
sal, louro
Vinho Tinto q.b.
Preparação:
Arranje e lave os chocos em água corrente, retirando-lhes alguma areia que possam ter, mantendo as bolsas de tinta, e deixe-os a escorrer numa rede
Num tacho levar ao lume o azeite, os alhos laminados, o sal, o louro e os choquinhos. Tape e sacuda o tacho uma vez por outra. Depois de refogarem cerca de 10 min. tapados, tira-se a tampa e deixa-se evaporar a agua, até os chocos começarem a fritar. Se for necessário junta-se vinho tinto.
Quando os alhos estiverem lourinhos, é sinal que os chocos estão prontos. Serve-se com batata cozida
