MAIONESE DE ERVAS
Ingredientes:
2 gemas de ovo
250 ml de azeite
Sumo de 1/2 limão
Sal q.b.
2 colheres de sopa de salsa picada
1 colher de sopa de cebolinho picado
1 colher de sopa de estragão picado
Preparação:
Coloque as gemas e o sumo de limão num recipiente redondo. Bata com uma vara de arames até os ovos começarem a espumar.
Vá acrescentando o azeite em forma de fio, sem parar de bater, até obter um creme espesso e branco.
Quando a maionese estiver bem firme, pare de bater e tempere com o sal. Acrescente a salsa, o cebolinho e o estragão e mexa delicadamente.
Conserve no frigorífico no máximo por 2 dias.
