MOLHO DE LARANJA
Ingredientes:
1,5 dl de caldo de carne muito concentrado ou molho de carne ou molho feito com extracto de carne
1,5 dl de vinho branco
1 laranja grande
1 colher de café de fécula
sal e pimenta
Preparação:
Retire da casca da laranja, com uma faca, apenas o vidrado. Corte a casca em juliana fina e ferva-a durante 3 minutos em água simples. Passe por água fria e escorra. Esprema o sumo da laranja. Junte o vinho com o molho de carne e a fécula desfeita numa colher de sopa de água fria. Tempere com sal e pimenta e deixe ferver e reduzir tudo para 2 dl, mal medidos. Junte o sumo de laranja e a juliana de casca de laranja. Leve o molho ao lume só para aquecer bem.
