MOLHO MARINHEIRO
Ingredientes:
1 chávena de mexilhões cozidos
3 colheres de sopa de óleo vegetal
1 chávena de caldo de legumes
raspa e sumo de 1/2 limão
1 dente de alho esmagado
2 colheres de sopa de concentrado de tomate
1/2 chávena de cebola picada
1 pimento vermelho cozido e desfeito
1 colher de sopa de maizena
alecrim e salsa picada
sal
pimenta em grão
Preparação:
Frite a cebola e o alho no óleo. Acrescente o tomate e o pimento desfeito. Engrosse o caldo com a maizena e junte ao resto.
Acrescente os mexilhões, alecrim, salsa, raspa e sumo de limão, sal e pimenta em grão.
Ferva suavemente durante 10 minutos para impregnar bem os sabores.
Obs: Pode-se fazer com amêijoas e, numa emergência, pode usar enlatados. Este molho serve para acompanhar peixe, massa, omeletes de ervas aromáticas, ou suflês de legumes.
