MOLHO VERDE (1)
Especial para pratos de peixe ou de carne mistas cozidas
Ingredientes:
30 g de salsa picada
30 g de miolo de pão
1 gema de ovo cozida
2 colheres de sopa de vinagre
2 filetes de anchovas
1 dente de alho
1 colher de chá de alcaparras
2,5 dl de azeite
Sal e pimenta q.b.
Preparação:
Amoleça o miolo de pão no vinagre. Misture a salsa com o alho, as anchovas e as alcaparras finamente cortadas. Junte a gema de ovo esmagada e o miolo de pão espremido.
Triture com a varinha mágica e, de seguida, adicione o azeite em fio, mexendo bem. Rectifique de sal e pimenta e deixe repousar durante, pelo menos, 2 horas.
