MOLHO VERDE (2)
Ingredientes:
1 chávena de folhas frescas de estragão, endro, e cebolinho, picados e misturados
1 chávena de espinafres cozidos
3 gemas de ovo cozidas
4 colheres de sopa de azeite
1 pitada de noz-moscada fresca e ralada
1/2 chávena de iogurte natural
2 colheres de sopa de vinagre
1 dente de alho esmagado
mostarda
sal
pimenta
Preparação:
Esmague as gemas cozidas com um garfo, acrescente o azeite, o iogurte e, por fim, os espinafres.
Acrescente o vinagre, o alho e as ervas. Condimente com mostarda, sal e pimenta a gosto.
Se ficar muito espesso, pode deitar um pouco da água onde cozeu os espinafres.
Acompanha salada de massa fria, peixe, carnes frias e enchidos.
