ARROZ DE LAPAS COM MOLHO D'AFFONSO
Ilha de Santa Maria
Ingredientes:
Uma boa dose de lapas
2 cebolas
alho
pimenta branca
manteiga
polpa de tomate (opcional)
1 folha de louro
2,5 dl de azeite
salsa picada
pimenta vermelha
Preparação:
Escolhem-se as lapas musgosas e lavam-se.
Refoga-se cebola em uma colher e meia de manteiga, deitam-se as lapas dentro, e mexe-se um pouco.
Depois junta-se uma gotinha de água, pimenta preta, três dentes de alho esmagados e um pouco de vinagre.
Retiradas as lapas usa-se o molho para cozer o arroz e junta-se as lapas no fim.
