BIFE DE LAGARTO [LOMBO DE VACA COM PIMENTA]
Ingredientes:
carne de vaca do lombo
pimenta (uma espécie de pimento vermelho e picante) cortada em tiras
azeite
alho
vinho branco
Preparação:
Põe-se o azeite a aquecer numa frigideira, e quando estiver bem quente coloca-se o bife acompanhada das tiras da pimenta e de alho. Enquanto a carne vai fritando rega-se uma , duas ou mais vezes, tantas quantas forem necessárias, com vinho branco, para flamejar.
A chama deve cobrir totalmente a frigideira e eleva-se nos ares, mas é essa acção que vai oferecer um melhor sabor ao bife.
