Molho holandês
Ingredientes
100 ml de vinagre de vinho branco
100 gramas de manteiga
6 gemas
sal
Levar o vinagre a cozinhar em banho maria até o líquido reduzir para aproximadamente metade, altura em que deve juntar 2 colheres (sopa) de água fria, as gemas batidas, o sal e metade da manteiga, batendo energicamente com as varas até que se dissolver tudo. Deixar ferver até engrossar, mexendo sempre, e juntar lentamente a restante manteiga derretida, alternadamente com colherinhas de água fria. Mexer bem, temperar com sal a gosto e servir imediatamente.
