MOLHO DE XEREZ
Ingredientes:
1/2 chávena de figos secos moídos.
1 cálice de xerez.
1/2 chávena de cogumelos moídos.
1 colher de sopa de farinha de milho.
1 colher de sopa de manteiga.
3 colheres de sopa de natas.
1chávena de caldo de galinha.
1 colher de sopa de uísque .
Sal
Pimenta verde.
Preparação:
Deixe os figos e os cogumelos de molho em licor durante 2 horas. Frite-os em manteiga.
Acrecente pouco a pouco a farinha de milho dissolvida no caldo. Ferva em lume brando durante 15 minutos.
Tempere com uísque, sal e pimenta verde.
Antes de servir incorpore suavemente as natas.
Serve para acompanhar aves ou borrego.
