POLVO À TRANSMONTANA

Ingredientes: Para 4 pessoas

1,5 kg de polvo
5 Dentes de alho
1 Folha de louro
Salsa
1 Copo de vinho branco
Farinha de trigo
3 Ovos
Pão ralado
Azeite para fritar

Preparação:

Coza o polvo até ficar bem tenro.
Escolha as partes mais grossa e corte em traços iguais.
Ponha os pedaços numa tigela e tempere com sal, os alhos esmagados, o louro, a salsa picada e o vinho branco.
Deixe marinar durante 5 horas.
Escorra bem os pedaços de polvo e passe-os por farinha, ovo batido e pão ralado, por esta ordem.
Frite em azeite abundante até estar douradinho e escorra em papel absorvente.
Sirva com arroz feito com as partes mais finas do polvo.
