Bacalhau Desfiado com Berinjela, Abobrinha e Espargos Frescos

Ingredientes:

* 200g de Bacalhau (seco desfiado e demolhado)
* 1 berinjela pequena picada em quadradinhos
* 1 abobrinha verde pequena picada em quadradinhos
* 1 cebola média picada em cubos
* 3 dentes de alho finamente fatiados
* 6 espargos verdes cozidos no vapor
* 8 mini-tomates amarelos
* pimenta branca moída na hora
* azeite
* sal
* croutons q. b.

Confecção:

Fritar o alho e a cebola numa colher (sopa) de azeite.
Incorporar o bacalhau desfiado e refogar por 2 minutos. Acrescentar a berinjela, os tomates fritos, a abobrinha, os espargos picados e a salsa.
Desligar o fogo, agregar os croutons.
Regar com um pouco de azeite, corrigir o sal e servir frio.
