Papaia gratinada com pesto
Ingredientes
Para 4 pessoas
1 papaia *
sumo de limão
1 dente de alho
1 ramo de manjericão
30 g de pinhões
± 0,5 dl de óleo Vaqueiro
sal
± 40 g de queijo parmesão ralado
pimenta de moinho
* a papaia não deve estar demasiado madura
Preparação
Ligue o grelhador do forno.
Corte a papaia ao meio, limpe-a de sementes, tire-lhe a casca e corte-a em fatias. Disponha as fatias de papaia num tabuleiro de louça, regue com um pouco de sumo de limão.
Esborrache o dente de alho, tire-lhe a pele e deite-o no copo da varinha mágica ou numa picadora. Junte-lhe um punhado de folhas de manjericão e os pinhões e triture um pouco. Vá adicionando o óleo e continue a triturar até obter uma pasta mole. Junte o queijo parmesão ralado e misture bem.
Coloque o pesto em colheradas sobre as fatias de papaia e leve ao grelhador do forno durante 2 a 3 minutos. Sirva como entrada.
