FEIJÃO COM ÓLEO DE PALMA

Ingredientes:

1 l de feijão
1 l de água
13 Colheres de sopa de óleo de palma

Preparação:

Lave muito bem o feijão em duas águas, depois de o ter deixado de molho.
Leve o feijão a cozer num tacho com 1,5 litros de água, e quando estiver meio cozido, deite um pouco de sal e meia chávena de óleo de palma, e deixe cozer completamente. Depois deite o resto do óleo, mexa e esmague um pouco o feijão para engrossar.
Deixe cozer o resto do óleo em lume brando (é conveniente, embora mexendo de vez em quando, sentir que o feijão está a agarrar ao fundo da panela).

Nota - Sirva com farinha de mandioca torrada, que se espalha por cima.
Também pode acompanhar com banana ou mandioca cozida.
Ao lado, numa travessa, sirva peixe assado (mufete), como carapau ou outro peixe miúdo.

Em Angola utiliza-se o Cacusso.
Faz-se um molho com água, gindungo (piripiri), cebola picada e sal e rega-se o peixe com este molho.
