Ameixas recheadas

Ingredientes

Para 4 pessoas
15 g de Vaqueiro
50 g de amêndoas grosseiramente picadas
50 g de presunto em fatias finas
2 colheres de sopa de natas
1 requeijão
raiz de gengibre
cebolinho picado
pimenta de moinho
6 ameixas Santa Rosa grandes
200 g de mistura de várias alfaces e rúcula

Preparação

Derreta a Vaqueiro numa frigideira, junte as amêndoas grosseiramente picadas e deixe-as alourar um pouco, mexendo sempre. Retire as amêndoas e, na mesma frigideira, aloure o presunto até ficar crocante. Retire e deixe arrefecer sobre uma folha de papel absorvente.

Junte as natas ao requeijão e esmague com um garfo até ficar em pasta. Pele um pedaço de raiz de gengibre, rale-o e junte o suco obtido à pasta de requeijão.

Pique finamente o presunto, misture-o com as amêndoas e adicione à pasta de requeijão. Perfume com cebolinho picado e pimenta moída na altura.

Lave as ameixas, abra-as ao meio e retire-lhes os caroços.

Distribua o recheio preparado pelas cavidades deixadas pelos caroços. Sirva as ameixas recheadas sobre uma cama de alface e rúcula.
